

Dark ochre.
At full strength the aroma is intense and rich and oozes baked desserts. Treacle toffee, creamy sherry trifle and baked Tiramisu bring a sense of indulgence, beneath which is a tray of delicious pastries – pain au chocolate, apple Danish and freshly baked croissants – served with marmalade, cherries and fresh cream. Sun-dried raisins in spiced bread, served with wholemeal toast and almond biscotti bring layers of warm baking.
Water releases an explosion of Oloroso aromas – fruitcake and walnut oil, baked gingerbread, toffee and raisins with the lingering soft sulphury smoke of a struck match. A rich fruity Christmas pudding is smothered in treacle and molasses. Alongside, peach and orange marmalade melds with plums, grapes and dried apricots. Crushed geranium leaves bring a crisp and fresh top note to clear the air.
Deep, mouth-filling and oily with a tingly effervesence. Hot toasted fruitcake, thick caramel and dark rum fill the palate with voluptuous warmth. Cinnamon spiced apples, plum sauce and prunes bring an almost cognac-like fruitiness, followed by a swathe of dark chocolate, aromatic coffee and walnut oil.
Long, deep and mouth-coating with walnut cake in treacle, baked orange marmalade and a traces of cinnamon-spiced Viennese coffee.
